  • 1 Puff pastry sheet (thawed)
  • Zinc House Farm tomatoes (thinly sliced)
  • 1 Ball of burata cheese
  • 2 tbsp Zinc House Farm olive oil
  • Fresh basil leaves for garnish
  • Salt and black pepper to taste


  1. Preheat the oven to 375°F (190°C).

  2. Roll out the puff pastry sheet on a floured surface and transfer it to a tart pan.

  3. Arrange the thinly sliced tomatoes on the pastry, leaving a small border around the edge.

  4. Drizzle Zinc House Farm olive oil over the tomatoes, and season with salt and black pepper.

  5. Bake for 20-25 minutes, or until the pastry is golden brown.

  6. Once out of the oven, top with burrata cheese and fresh basil leaves.

  7. Serve the tart warm or at room temperature, ideally paired with a glass of Clark Ferrea Touriga Nacional.
